In the discipline «Veterinary and sanitary examination» in the 2nd group of the 4th year of the IViB, under the guidance of the assistant of the Department of Parasitology and Veterinary Examination, Anatomy and Pathanatomy named after Professor S. N. Nikolsky Vasilisa Mitenko, a lesson was held on the topic: «Recognition of meat from sick and healthy animals. Organoleptic and laboratory research methods».
The purpose of the lesson was to master research methods that made it possible to distinguish meat obtained from the slaughter of healthy and sick animals, as well as those killed in an agonal state, butchered corpses.
The students independently determined the appearance, smell, and texture of meat from healthy and sick animals. Microscopic analysis was performed to determine the number of bacteria and the degree of decay of muscle tissue by microcoping Gram-stained smears. Laboratory studies were also carried out by setting up a formol reaction and a reaction to peroxidase.
The results of the study allowed students to develop a method for quickly and accurately determining healthy and diseased meat, which is an important step in ensuring food safety and quality.
